Back with refreshing passion fruit juice!!!

It is almost two weeks that my blog has been silent. It was some health problems due to which blogging could not be given a priority. Now that I feel much better but a little depressed, I decided to blog today especially to cheer me up.
Before going to todays recipe, I would like to wish the readers of Creative Saga a very happy Christmas!!!(though a bit late)Hope you all had a great time. I was planning to bake a Christmas cake ,but couldn't do so, maybe next time.
This year is coming to an end and I noticed that I have posted only a few posts each month as compared to the last year. But I managed to post good healthy recipes as I had promised in the beginning of this year. And am sure to continue doing so the next year. I am planning to spend some quality time with blogging and come up with some interesting things in my other blog too. So hope you keep visiting.
I bought some passion fruits few weeks ago and managed to make some nice juice with it today. A couple of years ago an ex-collegue of mine in India used to supply me this wonderful fruits fresh from the garden and we used to just love the juice made with it. When I saw them in Singapore recently, I was reminded of it and immediately bought them. Passion fruits has lot of health benefits too.

passion fruit juiceIngredients-
Passion fruits- 3-4nos
Sugar- 1/2 cup or according to the sweetness you prefer.
Water- 2-3 glasses

Method-
Cut the fruits in half and extract the seeds from it into a bowl. Pour the water in it and keep stirring for a few minutes. Filter it and squeeze the seeds to extract all the pulp around it. Discard the seeds. Add sugar to the juice. Mix well. Chill and serve.
The seeds are edible too and you can avoid filtering , but I remove them as I don't like biting into them.

Milagai podi/chutney powder for idlis and dosas

I never bought or tried making this chutney powder or also called as idli milagai powder before until I started making idlis and dosas frequently. I don't find time to make chutneys and sambars each time I make idlis, thats where this one comes to the rescue. So heres the recipe for the powder
idli milagai podi/chutney powderIngredients-
Udid dal- 50 gm
Channa dal- 50gm
Mustard- 1tsp
Til- 25gm
Red chillies- 1 cup(or more if you want it more spicier)
Asafoetida/Hing-1tsp

Method-
Dry roast udid dal,Channa dal and til seperately till they turn a golden brown. Heat oil in a pan. Add mustard seeds,salt, hing and then the red chillies and roast them for a few minutes. Combine all the ingredients and grind them finely in a chutney grinder. Store in a air tight container.
While serving, take the required amount of the powder and mix it with gingelly oil/til oil, goes very well with dosas and idlis. You can also rub them on idlis when you are carrying them in your lunch box.

Healthy Pizza- The easy way!!!

I have always wanted to make pizzas at home. And when I saw them in different blogs , cooking sites and Tv, I use to drool at the pictures and was more tempted to try it soon. I use to fall short of some ingredients or a proper recipe whenver I decided to make. But finally I used a recipe my friend suggested and the ingredients I saw in a cookery show and finally made pizza from scratch. It definitely tasted not only delicious, but is quite healthy too. I am surely going to make them again and it would be fun to try some new toppings too!!!
I would say, it is not soft as when made with all purpose flour.But as I substituted the flour with wheat flour, it was a bit crispy. Baking was not involved at all in this recipe. But next time, I am going to try other cooking options and other ingredients for the base as well as the toppings.

Ingredients-

For the base
Wheat flour- 1cup
Soya flour- 1/2 cup
Plain flour- 1/2 cup
Yeast- 1tsp
Milk- 1/2 cup
Sugar- 1tsp
Salt - 1/2tsp
Oil- 1-2 tsp

Method-
For the base
Add the yeast in warm milk and keep it for 5 minutes till it froths. In a large bowl, add rest of the ingredients except oil. Now add the milk- yeast mixture and knead to a loose and smooth dough using the oil. Now leave it covered in th ebowl for 2 hours. It will rise to some extent.
Then place the dough on floured surface and knead for a few more minutes. Make small balls with the dough. Roll each ball into a slightly thick circle( as that of paratha). Now grill the base for 2 minutes. Your base is ready.
Note- Its better to have a thin crusted base to ensure proper grilling.

Ingredients-
For Pizza sauce
Tomato- 2 big
Onion- 1 big
Ginger garlic- 1tsp finely crushed
Red chilly powder- 1tsp
Salt to taste
Mixed herbs- 1tsp
Oil- 1tsp

Method
For pizza sauce
Heat oil in a pan. Add the ginger garlic paste followed by the onions and saute till they appear translucent. Then add the chopped tomatoes( puree can be used). Add red chilly powder and salt. Cook for sometime till the tomatoes are completely cooked and you obtain a smooth paste. Add the mixed herbs and mix well.

Ingredients
For the topping
Capsicum- 1 cut into long pieces
Onion- 1 Sliced
Mushrooms- 4-5 chopped
Salt- 1/2tsp
Oil- 1tsp

Method-
Heat oil in a pan. Add all the ingredients with salt and saute till they become tender.

More ingredients for topping

Pineapple chunks- A few
Grated mozarella cheese as required

Method of assembling the pizza

Apply the pizza sauce on the base. Now add the prepared toppings including pineapple. Spread the grated cheese all over the toppings.
Now place this on a pan on stove top. Cover with lid. Cook for around 5 minutes untill the cheese melts.
Now your pizza is finally ready and serve it warm.

Vegetable pasta in white sauce- cheesy delight

Baked vegetable pasta in white sauce-
veg pasta in white sauce This version of pasta has always been my favourite. I love the cheesy flavour and the addition of choice of vegetables makes it healthy and colourful. Though a little high in calories, I do make this once in a while as its a family favourite too!!!

Ingredients-
Pasta- 1 cup
Mixed vegetables- 1 cup(Bellpepper, carrots,broccoli)
Butter- 1/2tsp
Salt to taste
Mixed dried herbs- 1/4tsp
Grated cheese to sprinkle on top

For white sauce-
Butter-1tsp
Cheese- 1tsp
Plain flour- 1tsp
Milk- 1cup
Pepper- 1tsp freshly ground
Salt if necesary( butter and cheese will contain the necesary salt)

Method-
Boil the pasta in water along with some salt. Drain the water when the pasta is fully cooked and wash it under running water so that they dont stick to each other.
Heat butter in a pan. Add the chopped vegetables and saute till it becomes tender.
Now prepare the white sauce-
Melt the butter in a pan. Add the cheese. Now add the flour. Mix. Now add milk slowly stirring well. Ensure there are no lumps. Add the pepper and salt if necessary. Allow it to thicken. Now add the Cooked vegetables and cooked pasta. Add the dried herbs and mix thoroughly.
Now transfer this to a baking bowl. Sprinkle some cheese on the top. Bake at 180c for 15 to 20 minutes.
Serve hot.
