Thenkuzhal - A South Indian savoury

         I have never tried making traditional Tamilnadu savouries by myself , infact I have never bothered to ask for a recipe or tried learning it from someone as I am not too fond of them. But my son loves them especially the popular murukkus. As my grandmother is here, I did not want to lose the opportunity to learn something from her. So one fine afternoon, we set out making the thenkuzhal murukkus. They tasted wonderful and I almost had a few while making them.They are certainly addictive!!
        I have recorded the step by step pictures so that it will be useful to beginners like me even when I will making them in future.
thenkuzhal recipe

Rice flour- 2 cups
Udid dal flour- 1/2cup
Cumin seed powder- 1tsp
Butter- 2tbsp
Oil for deep frying

Dry roast the rice flour for not more than 5 minutes.Place it on a big plate. Add the udid dal flour and cumin seeds powder and salt. Next add the butter and mix well and form a crumbly dough sprinkling few drops of water.

Heat the oil for deep frying.Use a murukku press which has a small plate with three holes on it. Add a portion of dough in the press.Press in a circular form on a plastic sheet. Carefully using your hands drop it in the hot oil. Fry till it is done. Remove from oil on a vessels with holes to drain the oil.Repeat the same process with rest of the dough.
To make it faster, drop 3 to 4 pieces in the hot oil. Fry for a minute. Remove from oil. Drop another 3-4 pieces in the oil. After frying for a minute, drop the half fried ones again in the oil. Now fry all the thenkuzhals till done completely.
     You can also directly press in the hot oil instead of a plastic sheet.
