Vegetarian tomato omelette recipe

      This was one easy,quick and tasty recipe  when I was just learning to cook after my marriage.It was so easy to put together and was always tasty in contrast to the other dishes I made at that time. This along with some toasted bread dabbed with some salted butter made a perfect breakfast or brunch for us. But then I never made this almost for the last couple of years until I was suddenly reminded of it one fine evening when I was in no mood to cook. I made this and we really enjoyed it for our dinner.
vegetarian tomato omelette recipe

Besan/kadalai maavu- 2 cups
Tomato(big)- 2 finely chopped
Green chillies-1 chopped fine
Coriander leaves- small bunch chopped fine
Turmeric powder-1tsp
Red chilly powder-1tsp(optional)
Salt-1-2tsp(acc to taste)
Oil- a few spoons for drizzling when cooking them)
tomato besan dosa
      Combine  all the ingredients in a big bowl. Add 2-3 glasses of water and mix well to a consistency of a dosa batter.
      Heat a tava(preferably non stick shallow saucepan). Pour a ladleful  of batter on it spreading it as you pour. When it cooks, pour some oil on the sides and flip it over to cook on the other side.
     Serve immediately with some ketchup.
You can even serve with some toasted bread.
