3-Ingredients Mango icecream cake recipe

Busy time of the year is here. I cant help wondering that second half of the year is always busier than the first half. We have all the Indian festivals coming up one by one. We do not want to give up celebrating them and end up doing things very promptly and meticulously as it comes only once a year. But this is also the time when the kids have their annual examinations.Then there are some things planned like baking once a week and blogging once a week. To top all of these I have set some goals in the beginning of this year which cant be ignored too!!! But I am doing things at my own pace. Though things get postponed by a day or two, I am still happy that I am still doing them as planned.Mango icecream cake

Baking this cake is also a result of not giving up my goal set for every week. I have seen this kind of cakes in the food blogging world more than two years ago. I have been wanting to bake for a very long time. I have usually seen such cakes made with chocolate icecream. We do not really stock up icecreams in our refrigerator like many of my friends. But my hubby got this particular mango icecream from the nearby supermarket. Its not that I dont like icecream, but this icecream with mango flavour was totally out of the world. I have never enjoyed an icecream so much. I finished an entire box in a few days and told my hubby to get another one too which I normally do not do. But then the guilt crept in.The guilt of usual heavy calories I have been consuming.Nevertheless I decided to do this cake. I thought the mango flavour in the icecream was so intense that the cake would taste great.The cake tasted good and to my surprise kids loved it too. I love to have a small slice with my coffee in the evening.

    I usually use atta/whole wheat flour in my baking. So the texture was a bit dense and chewy. My family has adapted to the taste and texture of whole wheat flour in the bakes. But if you do not like it this way, feel free to use all purpose flour.


The cake will be mildly sweet as we are not adding any extra sugar. You can frost the cake if you prefer. Buttercream icing or cream cheese frosting will be ideal.

Instructions
  1. Keep the icecream at room temperature and let it melt completely. Grease and flour a pan. Preheat the oven at 180c. Take the icecream in the mixing bowl. Beat it with a whisk.
  2. Add the Flour and baking powder. Mix well with a whisk to a uniform mixture. Pour this in a prepared pan. Sprinkle some sugar on the top. Bake at 180c for 25 minutes. Check if the cake is done by inserting a skewer in the center of the cake. Remove from the oven and allow it to cool for 10-15 minutes. Slice the cake and serve with tea.

You can replace atta with all purpose flour.

You can dust some powdered sugar on the baked cake. You can also frost the cake .As we are not adding extra sugar, the cake will be mildly sweet.
