Hello to all my readers after a long time.I had mentioned in my previous post in november that I would be irregular.The kids are having holidays,my family from India were here and we had small trip to Bangkok. So basically, we were having lots of fun for the last couple of days. I did not even feel like touching my laptop though I had a few drafts. Now that the holidays are almost coming to an end and I thought of doing a quick post. I had been cooking and trying out a few new recipes though I could not take pictures of all that made. But will gradually come back to regular blogging soon.

We all love cakes and cookies. But have to restrict them for special occasions as it requires sugar and butter especially cookies. Cookies needs huge amounts of butter/oil or ghee or eggs for binding. But when I saw the eggless recipe using nut butter and oats, I wanted to try it out. Its really healthy and tasty as well. My little one loved it too. All the cookies got over in a day and I am sure to make this kind of cookies frequently. It will make a good afternoon snack for kids.
Its a good one for vegans also and have given a substitute for the curd. Check out the notes.

- 1/2 cup almond butter
- 1 cup oats
- 1/2 cup Coconut palm sugar - (see notes)
- 3/4 tsp baking soda
- 3 tbsp Curd / yogurt - (see notes)
- 1/4 cup chocolate Mini chips

- Blend the oats in a blender/mixer to a fine powder.
- Pour the fine powder in a mixing bowl.
- Add the almond butter.
- Add the baking soda and sugar.
- Combine everything together.
- Pour the curd and mix well.
- Add the chocolate chips and mix to form a dough.
- Pinch out small lemon sized portions of the dough.
- Gently flatten them.
- Place them on a baking tray lined with a baking sheet.
- Bake at 180c for 10 minutes.
- Remove from oven and dont touch them as they will be crumbly.
- Allow it to cool for 10 -15 minutes and they will harden.
Notes-
1.Use fine granulated white sugar or brown sugar instead of coconut palm sugar.
2. If you are vegan, replace curd with apple sauce.
3. Curd can also be replaced with one small egg.
4. You can omit chocolate chips if you dont like them.
