I love blueberries and buy them almost every week when I visit the market.We love to eat them as such. Its a good source of antioxidants. Sometimes, I feel like trying something with these black beauties and use them in my bakes. This time when I had a excess of blueberries, I found this recipe and as I love fruity desserts , I decided to go ahead with this one. It was really yummy and you can try making this one with cherries or strawberries or other berries too!!Kids are surely going to love this. Its quite healthy also as whole wheat flour/atta and oats is used in this recipe with extra goodness of two fruits.I wouldn’t mind having this for my breakfast too!! Apple blueberry pie bars - baking for kids
Peel and slice the apple. sprinkle some lemon juice on it ao that it does not turn brown and keep it aside till use.
Combine the berries,orange juice and sugar in a saucepan.
Mix well and heat the mixture.
Bring the mixture to a boil.
Boil for another minute and whisk the mixture.
Dissolve the cornstarch in a 3-4 teaspoons of water.
Add this milky mixture to the boiling mixture.
Remove the flame and allow it to cool.
When the blueberry mixture is cooling, combine the wheat flour,oats,sugar,baking powder and cinnamon sugar.
Add the melted butter and mix with your fingers till the mixture is crumbly.
Take 2/3rd of the mixture on a pie/baking pan. Press it till it is tight and even.
Place it in oven for 10 minutes at 180c so that it will set.
Spread the blueberry filling on the crust.
Place the apple slices on the blueberry filling.
Top this with remaining pie mixture.
Bake for 35 to 40 minutes at 180c till the top turns slightly brown.
Remove from oven and cool it for 10-15 minutes.
Refrigerate it for 3 hours.
After minimum 3 hours of refrigeration, cut into squares.
Serve and store the rest in refrigerator.
1. Blueberries can be fresh or frozen. Do not thaw.
2. You can make the filling well in advance, even before 2 days.
