Apricot jelly recipe using gelatin–easy dessert recipes

I love apricots and add them in most of my cakes and pudddings. When I came across this recipe to make apricot jelly, it sounded very interesting. I made it and was over in no time. My hubby who is not too fond of dried apricots as it is liked the taste of the jelly. It can be served with cakes and icecreams . This is another one from Margaret’s recipe book.So here’s the recipe.

Ingredients
  • 250 g apricots Dried - (soaked overnight)
  • 1 tbspn lemon juice
  • 1 1/2 tbspn Honey
  • 3 tsp Gelatine water - soaked in 3tbspn

  • 250 g apricots Dried - (soaked overnight)
  • 1 tbspn lemon juice
  • 1 1/2 tbspn Honey
  • 3 tsp Gelatine water - soaked in 3tbspn
Instructions
  1. Place the apricots in a pan with the liquid in which they were soaked,adding more water if necessary to cover. Simmer for 20-30 minutes until tender.
  2. Place the apricots and liquid in blender with lemon juice and honey and blend unti very smooth. Add water to make up 3 cups if necesary.
  3. Place the gelatin in a bowl over a pan of simmering water and stir until dissolved .Stir into the apricot mixtue.
  4. Pour into jelly mould and chill until set.
  5. Dip the mould quickly into hot water to loosen and turn out onto a serving dish.
  6. Serve chill as it is or with icecream and cakes.

    Somehow I dont like its smell:(… but its very good for health, so need to try once in a while.

    BTW, Jelly looks perfect.

  2. Yummy jelly Sow…I have some dried apricots in the cupboard and had no idea what to make since both of us didn’t like its smell..shall try out your jelly..looks too good!!

  3. I love that jelly, Sowmya! I haven’t tried my hand at making any before, but this is inspiring. Is the gelatine absolutely necessary, in your opinion? I ask because gelatin has animal ingredients and is therefore not something I would use.

    You need some agent to solidify (to gel)your liquid mixture..so gelatin is quite necesary..I am not sure if there is solidifying agent free of animal ingredients as you say…But will let you know when I find out!!
