Avacado salad and moong bean patty sandwich – bread recipes

              I usually try to make make our dinner light and balanced. We usually don’t opt for rice in the night as its too tempting especially if there is delicious side dish along with it and then we end up eating more. So its usually a millet variety with a side dish or some kind of upma with either semolina or cracked wheat. Sometimes, I make a sandwich with different ingredients and my kids love this kind of food for dinner. So when I made it last time, I decided to use lentils as well as vegetables to make it wholesome. So hop over to the recipe to find out how I made it.


We really loved it and am going to make more of this kind in future. Just one sandwich was quite filling and also satisfying as it was quite healthy too!!

            Sandwiches is always a favourite and both young and old love it equally. I also made a very simple sandwich yesterday for a get together, actually a vegetable sandwich put together in a hurry. It was quite good and everyone appreciated a lot. I will be making it again and will post it soon. By the way , we had a a very enjoyable get together after a stressful october. We enjoyed playing with the kids and revived our childhood memories. It was a fun filled evening and hope to have more in future.

  • 8 Bread slices
  • 1 tbsp Butter - Around ( to apply on bread slices)

Instructions
To make Mung patty
  1. Wash and soak mung for 1 hour.
  2. Cook in a pressure cooker till soft.
  3. Heat a pan.
  4. Add a teaspoon of oil.
  5. Add the cooked mung.
  6. Add red chilly powder, salt and coriander powder.
  7. Stir and cook for 2-3 minutes.
  8. Add the cornflour and stir till the mixture is dry and comes together.(cornflour helps in binding)
  9. Heat a tava.
  10. Make patties of the cooked mung. Coat with bread crumbs.
  11. Place on the hot tava. Pour some oil around it.
  12. Cook on both side till its slightly brown in colour.
To make Avacado salad.
  1. Scoop out the flesh from the avacados.
  2. Mash with a fork.
  3. Add rest of the ingredients .Mix well.
To make the sandwich
  1. Apply butter on the both the surfaces of the bread.
  2. Place a small amount of avacado salad on the center.
  3. Place the patty on the top.
  4. Place cucumber,sliced onions and sliced tomatoes slices on it.
  5. Close the filling with another bread slice on the top.
  6. Place it in a sandwich maker or panini maker(griller).
  7. Cook till the bread slices turns golden brown.
  8. Serve warm with tomato ketchup.
  9. Notes-
  10. Use any bread you like.(white,brown,multigrain ,wholemeal)
  11. You can also drizzle some mayo or mustard sauce if you like on the top of the patty before cooking.
  12. You can place cheese slices or grated cheese on the top of the patty.
