Baby corn peas masala – quick side dishes for chapatis – easy recipes in pressure cooker

        At my place everyone loves baby corn. For several months now, I have been making a quick baked baby corn snack, a recipe given by a friend. My kids loved it and I did not try to make anything else with it. Somehow I never posted that recipe . I will do it sometime soon.

        I made this side dish for beetroot rice few days back when my son had to stayback in school for some extra classes. During such days, I find it very convinient to make variety rice along with some curry or some stuffed paratha.


         Its really easy to make as I made it in the pressure cooker and it was done in minutes. Otherwise the babycorn takes longer time to cook usually. The recipe is really simple and involves some quick steps compared to some rich side dishes which involves some complicated process.I have made this kind of gravy for many vegetables several times now and we have always enjoyed its simple yet rich texture.

  1. Combine the onion,tomato,ginger ,garlic, cashewnuts along with milk in a blender and grind it to a smooth paste.
  2. Heat oil in a pressure cooker pan.
  3. Add the paste. Add turmeric powder,red chilly powder,coriander powder,kasuri methi and garam masala . Mix and saute till the mixture thickens a bit in around 5-7 minutes.
  4. Now add the baby corn and peas.
  5. Add salt and mix well.
  6. Add 1.5 glasses of water.
  7. Close the lid and pressure cook for 4-5 whistles.
  8. The baby corn should be cooked to a soft yet crisp texture.
  9. After you open the cooker, adjust the consistency of the gravy by addig some water if necesary and adjust the seasonings accordingly.
  10. Serve immediately with some hot chapatis or even rice.
  11. Notes-
  12. 1. You can add some cream in the end to make it more richer.
  13. 2. You can make cashewnut paste seperately by soaking the nuts in hot milk for 30 minutes and grinding it to a smooth paste
