Badam aur makhana ki kheer – Almond and lotus seeds pudding – easy pudding recipes

       Before you say that I have left blogging, I finally decided to do a post today. I do have a few posts in my drafts , but somehow I kept it postponing with the other activities. Its the busiest time of the year for the kids with a number of activities lined up at school which keeps all mummies on their toes. While some other things comes up along with the usual routine activities. Similarly kiddos teacher wanted a few parent volunteers for some activity in school for the SG 50 celebrations going on. All kids were given lego sets and had to make some important monuments of Singapore with them. We had to help the kids with it. It was full of fun and excitement. We all felt energetic and were amazed at their imagination. The kids came up with beautiful models with their lego sets.


    Okay to the recipe now, I made this kheer some ages ago. I got these makhana (or lotus seeds or you can even call them lotus nuts or fox nuts )after I learned that they are really nutritious and low in fat. They can be roasted and served as a evening snack. I will post that recipe sometime soon. Meanwhile one day I decided to combine almonds and these nuts as I heard the combination works really well and made a payasam/kheer/pudding with it. It was really good and we enjoyed it. The kids found a little weird eating the lotus seeds for the first time , but later they enjoyed the dessert. You can serve it chilled. We love our kheer chilled, but its your wish how you want to serve it. Its almost badam kheer with a extra nutrition of lotus seeds and chironji.

Ingredients
  • 1/2 cup Almonds
  • 3 1/2 cup+1/2 cup Milk
  • 1 cup lotus nuts / lotus seeds Makhana seeds
  • a pinch of strands Saffron / kesar
  • 1/2 tsp Cardamom powder
  • 1 cup Sugar
  • 1 tbsp Chironji/charoli/saara parappu

Ingredients
  • 1/2 cup Almonds
  • 3 1/2 cup+1/2 cup Milk
  • 1 cup lotus nuts / lotus seeds Makhana seeds
  • a pinch of strands Saffron / kesar
  • 1/2 tsp Cardamom powder
  • 1 cup Sugar
  • 1 tbsp Chironji/charoli/saara parappu
Instructions
  1. Place the almonds is hot water for an hour.
  2. Peel the skin.
  3. Put them in a blender along with half a cup of milk and saffron.
  4. Grind it to a smooth paste.
  5. Boil the milk.
  6. Add the ground almond paste and mix well.
  7. Stir the milk at regular intervals.
  8. Keep stirring for around 5-7 minutes till the milk thickens.
  9. Add sugar along with cardamom powder and mix well.
  10. Stir for another 5 minutes.
  11. Add the charoli and makhana and stir for a few more minutes.
  12. This should take around further 5-7 minutes.
  13. Remove from flame.
  14. Allow it to cool a little and serve.
  15. You can serve this chilled too!!

Notes-

1.Adding chironji is a option. You can try adding other nuts roasted in ghee or avoid adding others nuts totally.
