Baklava rolls recipe – Easy Sweet recipes you can try for diwali

         This may not be the authentic recipe for the middle eastern delicacy Baklava. I have never tasted one or I have very faint memories of having a small piece at a friend’s place. But I really dont remember the texture and taste. But I have been seeing it in a couple of blogs  for a couple of years, I have always wanted to try this. I could imagine the taste of nuts wrapped in a layer of flaky pastry sheets soaked in sugar syrup infused with lot of yummy unimaginable flavours. So I finally made it yesterday. It tasted delicious . My hubby had a couple of pieces in a go though my kids did not enjoy this delicacy. The friends with whom I shared this also liked it.


I referred a lot of blogs for making this delicacy . I tried to make it as simple as possible and took lot of tips from different blogs i reffered to. So as I said this is not the original recipe for baklava , but a cheats version!! The actual baklava uses phyllo dough , whereas I used spring roll pastry sheets as it is the closest to it. Spring roll sheets are readilly available. But if you find phyllo dough  and if you are keen on using it, you certainly can . Infact you can even search on the internet for making phyllo dough at home as its definitely possible. But I also read in a blog that spring roll sheets are easier to handle. Also I read that if you have tasted authentic baklava, then this might not be very interesting to you, but if you havent, then I am sure you are going to like this one.

        Basically the recipe is very easy and I had fun making it. But it does take a lot of time, but of course the result is definitely worth your time. I hope you try this one and let me know if you liked it!!

  • 20 pastry sheets Spring roll - Around
  • 3 - 4 tbsp Butter
  • Filling
  • 1/2 cup Almonds - (chopped fine or coarsely ground)
  • 1/2 cup Pistachios - (Chopped fine or coarsely ground)
  • 1/2 cup Walnuts - (chopped fine)
  • 1 tbsp Bread crumbs - (it binds the filling)
  • 1 tbsp Coconut powder
  • 2 - 3 tbsp Castor sugar / icing sugar
  • 1/2 tsp Cardamom powder
  • Sugar syrup
  • 1 cup Sugar
  • 1/2 cup Water
  • 1 tsp Lemon juice
  • 1 - 2 tsp Rose water
  • A tsp maida water seal pastry sheets of mixed in little to the .

Instructions
  1. Preheat the oven to 160c
  2. Thaw the pastry sheets.
  3. Place it on a plate and cover with a moist cloth until use.
  4. Combine the nuts, cardamom powder ,coconut powder and icing sugar in a bowl.
  5. Mix well.
  6. Place a pastry sheet on a tray. Apply some butter on it.
  7. Place another pastry sheet on it and apply butter on it.
  8. Stick another pastry sheet on the edge of the first one.You can use maida paste to stick the sheet.
  9. Apply butter on the sheet.
  10. Place another pastry sheet on it.
  11. So a long sheet is ready for the filling.
  12. Place some filling on one shorter edge of the prepared sheet.
  13. Roll it once.
  14. Apply butter on the top of the rolled portion.
  15. Again place some filling on the edge.
  16. Roll it once and apply butter on the rolled portion.
  17. Do the same till you reach till the end of the sheet.
  18. Seal the end with some maida paste.
  19. Repeat the same process with rest of the sheets and the filling.
  20. Place on a baking tray carefully.
  21. Bake it at 160c for around 40 minutes. or till it turns golden brown on the top.
  22. Meanwhile, when the rolls are baking, make the sugar syrup.
  23. Combine the sugar and water.
  24. Boil till the syrup becomes thick to a one string consistency.
  25. Add lemon juice to stop the crystallization.
  26. Switch off the flame .
  27. Pour rose water and mix.
  28. Cut the rolls while still hot into two or 2 inch pieces according to the size of the pastry of you have used.
  29. Place them on a plate with the nuts side facing the top.
  30. Pour the hot sugar syrup over it so that the insides will absorb the syrup well.
  31. Add rest of the syrup all over the rolls.
  32. Leave the rolls in the refrigerator for around 6 hours for the flavours to be infused well.
  33. Serve chilled.
  34. My notes-
  35. 1.Add sufficient amount of sugar syrup. Or else some portions in the layers will be left crispy.
  36. 2. You can use orange blossom water instead of rose water.
Recipe Notes

3. Use different combination of nuts available with you.

4. Butter is to be used generously.

5. Authentic recipe of baklava uses phyllo dough.

6. Dip your finger or use a brush to stick the edges of the pastry with the maida paste. Alternatively egg wash can be used to stick it. But I was not comfortable using it.
