Last two weeks were quite busy!! I got into my usual routine of morning walks. And then the kids exam where I had to attend to and then the Ganesh chaturthi pooja. I did cook a elaborate fare for Ganesh chaturthi. You would have seen it in my instagram if you are following it. I have tried to do some baking atleast once every week. I prefer serving homemade bakes during the teatime to my kids instead of store bought biscuits and cookies which they love to devour on.
Recipe courtesy – Just a taste
This particular bread happened when I had the abundance of all the required ingredients. I had seen this recipe recently and I love it as it was a bit unusual than rest of the banana breads we usually bake. I had bought some cream cheese couple of months ago and I had to use them. I still have some more left and will be sharing some more bakes with it shortly. I had some very ripe bananas which were also quite perfect for this recipe. I had frozen a couple of bananas which were left over after the prayer we had sometime ago. I made some minor changes to the recipe. I used a bit of whole wheat flour instead of all purpose flour. And also some yogurt instead of egg in the cream cheese filling as I thought it would have a eggy taste to to it.
The resultant cake was simply delicious. I and hubby just loved the taste of tangy cream cheese filling in midst of the banana cake. My kid loved it too though he is not too fond of the cream cheese. But he liked the banana bread portion more. I hope you all try this and enjoy it just as we did!! And do leave your feedback if you do bake!!
