Blueberry cheesecake in a glass – easy dessert recipe ideas

        I made this dessert a few days ago during the holidays. I always wanted to try a no bake cheesecake for a long time. I love the cheesecake available in Mccafe, mcdonalds. I have it rarely because of the calories in it, but its simply awesome.So I love cheesecakes a lottt!!! But I wanted to use a very simple recipe and did not want to use gelatin etc.So I came up with this idea of making in individual glasses like a pudding. I saw similar recipes in a couple of websites too.

      We loved it. When I was making this dessert, I promised myself to just taste a few spoonfuls. But I really couldn’t stop myself from having the whole glass. I really mean it when I say this. Though I felt a little guilty , but compensated by walking a few extra rounds!!!1

      This is a ideal dessert during get togethers. You can make this in small disposable glasses according to the number of guests you will be hosting. Its a exotic dessert and looks like you have put so much efforts making this , but its really easy to put them together.

      You can even try this with strawberries or cherries too. If the fruit pie filling is not available, look forward for my next post where I will be posting the recipe of blueberry compote/filling.

  1. Puree the fresh blueberries in a blender.
  2. Break the cookies into small pieces.
  3. Put it in a blender and grind/blend it to a fine powder.
  4. Combine the powdered cookie and butter in a small mixing bowl.
  5. Mix it with your fingers till it resembles crumbs.
  6. Add a small portion of this mixture in the glasses.
  7. Press it with your fingers to fill the 1/4 of the base portion.
  8. Now combine the cream cheese and powdered sugar.
  9. Mix to form a thick creamy paste.
  10. Add the blueberry puree and lemon juice.
  11. Mix well with a whisk.
  12. Spoon the mixture above the cookie layer.
  13. It should occupy more than half portion of the glass.
  14. This is the main layer.
  15. Now top this layer by spreading with the blueberry pie filling.
  16. Chill well in the refrigerator.
  17. Serve chilled.

Adjust the quantity of the ingredients in each layer according to the size of your glass and number of glasses.

You can skip the fresh blueberries if you dont have.
