Boxed baking mixes are something which I buy very rarely. For regular baking at home,I prefer using healthy ingredients available with me to bake cakes,cookies and brownies. I usually try to avoid giving my kids store bought biscuits and cookies for their snack time.Though I always keep a packet or two for them to indulge once in a while. I make healthy bakes or a proper indian snacks like bhel,chiwda or roasted makhane or popcorn most of the days. I had bought the betty crockers muffin mix so that I can make it one day for their afternoon snack. I was too tempted to buy it when I visited the cold storage few months ago.I had almost opened the pack to make some muffins that day when I suddenly decided to make cookies for a change and for some fun,of course!!
A quick search in google yielded many such recipes but had eggs in it. I wanted to make it eggless so used my own ingredients of choice. They turned out really good and were delicious too. Kids really enjoyed them. The texture was soft and chewy. In case you want a little crunchier cookies,you can try baking it for a few more minutes. But do not overbake them and make them too brown. It might get too hard. You can keep such boxed baking mixes and try doing something different with it atleast once in a while. They are generally quick to make and you can whip something delicious with it within minutes.
