Blueberry muffin mix cookies – quick baking recipes

Boxed baking mixes are something which I buy very rarely. For regular baking at home,I prefer using healthy ingredients available with me to bake cakes,cookies and brownies. Infact I bought a few packets when I had got a new oven and just leaning to bake. You can go through my recipe index in the navigation menu to find more about it.

I usually try to avoid giving my kids store bought biscuits and cookies for their snack time.Though I always keep a packet or two for them to indulge once in a while. I make healthy bakes or a proper indian snacks like bhel,chiwda or roasted makhane or popcorn most of the days. I had bought the betty crockers muffin mix so that I can make it one day for their afternoon snack. I was too tempted to buy it when I visited the cold storage few months ago.I had almost opened the pack to make some muffins that day when I suddenly decided to make cookies for a change and for some fun,of course!!


A quick search in google yielded many such recipes but had eggs in it. I wanted to make it eggless so used my own ingredients of choice. They turned out really good and were delicious too. Kids really enjoyed them. The texture was soft and chewy. In case you want a little crunchier cookies,you can try baking it for a few more minutes. But do not overbake them and make them too brown. It might get too hard. You can keep such boxed baking mixes and try doing something different with it atleast once in a while. They are generally quick to make and you can whip something delicious with it within minutes.

  1. Place the contents of the muffin mix in a mixing bowl. Pour the oil and yogurt into the mix. Add the vanilla essence. Gather it together and gently knead it to a dough. Add milk only if you are unable to gather them and knead it to a dough.
  2. Make lemon sized small balls of the dough. I made around 10 pieces. Place them on the baking tray . Keep some space within them as they spread apart. Bake at 180c for 10 minutes. Remove from oven and cool them for 20 minutes. Store in air tight conatiner. Serve with tea!!

Recipe Notes

Add milk only if necessary.

The cookies will be crumbly and soft at first.

They will eventually harden after cooling.

This muffin mix makes around 6 muffins. I could get around 10 cookies.
