I am sorry if you were expecting some other post probably a sweet recipe for diwali today and landed for a very simple recipe of boondi raitha. I still have to draft the post for some sweets. Till then hope you enjoy this side dish for any rice variety especially for pulaos and vegetable rice.
I have always loved this when I was young when we ate out and hardly was made at home. I remembered this some couple of months ago and since then make it quite regularly for get togethers.
Check out for vegetable pulao recipe here.
Boondi raitha recipe - side dish for any rice variety
The curd should not be sour.
Beat the curd using a whisk or a spoon.
Add cumin seeds powder and chaat masala.
Add little salt and sugar. Take care when adding salt as the boondi is also going to contain salt.
Just around 15 minutes before serving, add the boondi and mix.
Boondi will absorb the curd as well as be a little crispy if you add it in the curd just before serving, otherwise,it will become too soggy.
Serve with pulao. mixed rice, jeera rice.

You can add a teaspoon of red chilly powder. The boondi I bought already had some chilly powder. so I did not add seperately.
Also you can chop some mint leaves(very fine) and add a tablespoon of it to the raitha for more flavour.
