Capsicum rice recipes- easy rice varieties- Lunch box recipes

      My mom cooked the most delicious food I have ever eaten. She whipped up so many delicacies and varieties of cuisines in no time. I think she inherited from her mother who cooked great food too.

I am nowhere close to them when it comes to cooking. I wish I had learned more cooking from her. But I was never interested in cooking that time. Though I did learn a few basic recipes  like dal khichdi, rasam  and carrot halwa too.Capsicum rice was one of them. I did not make this many times in the last few years. I suddenly remembered this one because I make different rice varieties for the lunch box.I get very less time for cooking lunch in the morning.Such recipes comes to my rescue. I remember, my mom used to make this masala well in advance and store it in a tight container. It always comes in handy when you are cooking in a hurry. We loved it!!

To make the spice mix/masala-
Instructions
  1. To make the masala powder/spice mix
  2. Dry roast all the ingredients mentioned under the title spice mix/masala.
  3. Allow it to cool and grind it to a fine powder. You can make this well in advance and store.
  4. Wash the rice well. Add water and cook till soft. The grains should be seperate and not mushy.
  5. Heat oil in a pan.
  6. Add mustard seeds.
  7. When it crackles, add udid dal and channa dal.
  8. When it browns slightly,Add the peanuts.Saute for a minute.
  9. Add curry leaves and onion. Saute till the onion turns translucent.
  10. Add turmeric powder and salt. Mix.
  11. Add the chopped capsicum.Mix and cook till it is soft,yet crunchy.
  12. Add the masala powder/spice mix.
  13. Mix well.
  14. Add the cooked rice.
  15. Mix well with a spoon gently.
  16. Garnish with coriander leaves.
  17. Serve with curd,raitha or papads.
