I decided to bake a mango cake. I used a simple vanilla cake recipe and adjusted the ingredients to include the mango puree. I used fresh indian mango(banganapalli) variety . I did not bother to try with the whole wheat flour this time and went ahead with the refined flour. The cake turned out to be very soft and spongy.
I have seen in a couple of blogs featuring them and they looked quite tempting. I wouldn’t call this cake completely healthy. I have used an egg and the regular granulated sugar and the usual ingredients. Except that I have added more of whole wheat flour and a little of plain flour. But for a more whiter and a spongier texture, you can consider using plain flour completely.
This particular bread happened when I had the abundance of all the required ingredients. I had seen this recipe recently and I love it as it was a bit unusual than rest of the banana breads we usually bake. I had bought some cream cheese couple of months ago and I had to use them.
I thought the mango flavour in the icecream was so intense that the cake would taste great. The cake tasted good and to my surprise kids loved it too. I love to have a small slice with my coffee in the evening.
Craving for a coffee flavoured cake. Make this one in just 2 minutes!!
The cake has a distinct mango flavour and proper sweetness. It feels delicious to bite into the extra sweetness of the mango bits which is added into it.
It turned out quite good and delicious though it wasn’t too moist and had a dry crumb but soft in the inside. The colour was good too!! It tasted good and my kids had them too!! You can try this out if you love fruit and nut cakes.
I had made this muffins almost six months ago. I had got a packet of frozen khoya from mustafa last year with an intention of making some sweets for diwali , but never found the time. Finally when it was nearing the expiry date, I decided to make the muffins which I had bookmarked long ago from a few blogs. I did not want to use eggs or condensed milk in it. So I finally took a recipe from here and made some small changes in the measurements and eliminated a few ingredients.I think I baked the cake a tad more time and it sunk a little in the center. But the cake was denser as I had expected it to be just like we find in the indian bakeries. Its certainly not going to be spongy. But the cake was really good and it involves lots of calories , so I would not
I have been wanting to try this caramel cake recipe from a very long time. But somehow due to my busy schedule and also partly because of my laziness , I have been postponing it. Infact I was not baking at all after repeated requests from my kids. So finally I made it last friday as I had some free time due to school holiday declared because of the haze. I have a few posts in my drafts which I have delayed posting for so many months already, but this cake was super special. It was so delicious that I…
Now this has become quite a long break and I really do not want to rant on how life has become busy again when the school reopened a couple of days ago. That is because I am not complaining at all. I have been so busy and I am actually enjoying it. I have been cooking something nice and different apart from the daily food especially during the weekends. I even posted the pictures on instagram. I cooked a small and simple feast for my hubbys birthday too. I am cooking something special for my kiddo when he has staybacks in…
