I decided to bake a mango cake. I used a simple vanilla cake recipe and adjusted the ingredients to include the mango puree. I used fresh indian mango(banganapalli) variety . I did not bother to try with the whole wheat flour this time and went ahead with the refined flour. The cake turned out to be very soft and spongy.
The recipe uses whole wheat flour and no refined flour. I have used unrefined sugar too. It has a mild sweetness and is very apt for breakfast or mid morning snack. The recipe is a keeper.
The muffin recipe is super easy to bake. Its done within 30 minutes. This is definitely a must try recipe , eggless too.
It looks so appealing with the jam on the top and kids will surely enjoy them. So that day I decided to make the normal way without any healthy ingredients. I used all purpose flour and granulated white sugar. I used only half a cup of sugar and it was okay for us. There is sweetness of the jam too.
I enjoy using healthy ingredients in my baking. Here in this recipe , I have used oats and whole wheat flour. It hardly takes any time to put the ingredients together and the whole thing takes less than 30 minutes. Its so easy to make. The taste was awesome too. Kids really enjoyed them.
I have seen in a couple of blogs featuring them and they looked quite tempting. I wouldn’t call this cake completely healthy. I have used an egg and the regular granulated sugar and the usual ingredients. Except that I have added more of whole wheat flour and a little of plain flour. But for a more whiter and a spongier texture, you can consider using plain flour completely.
The flour is not at all coarse and is quite smooth and powdery which I thought will be quite ideal in baking. I have tried brownies with them. It tasted good but I still need to adjust the ingredients to make them blogworthy. But the cookies which I made similar to our Indian nankhatai turned out very good.
I do wish to come back to regular blogging but it really seems quite impossible these day as the routine work takes up all the time. Weekdays are very tiring and weekends are for relaxing so that we can regain the energy and be ready for the next weeks haul. […]
Garlic ,tamarind and jaggery is added to suppress the pungent fiery taste of the red chillies. But it is still very spicy. I love to have it with my curd rice , chapatis or dosas sometimes.
This is a very easy recipe and its my go to recipe whenever I don’t have much time for cooking. This does not really require any side dish as such though you can serve a side dish of your choice if you like it that way. Papads or chips should be a good choice to serve with too!
