Cheesy broccoli bites /balls – Kids snack recipes

There was a time when I used to cook a lot reffering to cookbooks. But then recently, I never found time. I used to bring home a lot of cookcooks especially baking books from the library. I would even copy down a few recipes and never saw it again. I totally stopped bringing books and I stopped buying them too. But recently when we went to a nearby mall, there was a old books sale going on. It was quite surprising to see a lot of cookbooks by Indian authors. I found a book by Nita mehta which contained snack recipes for children. It looked really interesting and I bought it. The most surprising thing is I also tried a recipe from it!!!

 

 


It was during the super long weekend during the chinese new year I made this one for breakfast actually. It was unusual as I make deepfried snacks rarely and when I made it for breakfast, It was something the kids really enjoyed. It was one delicious way to eat the otherwise boring broccoli and the hot melting cheese inside after every bite made it even more delicious.

I know it wont be so regular at my place as it is quite tempting and we end up eating a huge amount of this snack. But I would love to make for my kids atleast once in a while. I do recomend that you give this a try. Your loved one are going to enjoy it. You can even make it for parties and gettogethers.

Instructions
  1. Boil the chopped broccoli in water for 2-3 minutes. Drain the water.
  2. Heat oil in a pan.
  3. Add the ginger garlic paste and the onions and saute till it is soft.
  4. Add the potato,oregano ,salt and blanched broccoli.
  5. Cook for 3-4 minutes.
  6. Remove from flame.
  7. Grind the bread slice in a mixer for fresh bread crumbs.
  8. Add the cheese and bread crumbs to the broccoli mixture.
  9. Take the cornflakes in a ziplock bag. Seal it and cursh it coarsely with a belan( rolling pin).
  10. Spread the cornflakes mixture on a plate.
  11. Shape the above mixture into small balls.
  12. Moisten each ball slightly with some milk.
  13. Roll the balls on the cornflakes mixture to cover the ball completely.(forgot to take picture of this step)
  14. Heat the oil for deepfrying.
  15. When the oil is hot enough, add each ball in the hot oil and deep fry till it is golden brown.

Serve with some tomato ketchup.
