Coconut milk pulao

I made this pulao many months ago when I had first seen it is illatharasi’s blog. She had used the microwave. I used a pressure cooker and made minor changes to the recipe. This is how I made.

  1. Wash the rice and keep it aside for 10 minutes.Heat oil in a cooker pan. Add cumin seeds and the spices. Then add the ginger garlic paste and the onions and saute till they turn translucent. Add the mixed vegetables.Saute for sometime. Add the rice and coconut milk and mix well. Add required amount of water and pressure cook.
  2. Serve the rice hot with raitha.

  1. My mom makes this beautifully, I tried it long back with brown rice, just did not work. It failed to absorb all the coconut milk flavor.
    Would like to try with white rice.
