Corn upma – easy breakfast recipes- corn recipes

      There are still some days when we just have bread,oats or cornflakes for breakfast,though beginning of the year, I had decided to make proper filling breakfast as it is considered the most important meal of the day. So I do make idli/dosa/adai batters regularly or sometimes its poha or upma. I also make instant dosas a lot nowadays with atta,rice flour,rava, ragi, sorghum, oatmeals etc.So most of the days we do have satisfying breakfast. I need to get more organized and plan before hand as the twosome manage to keep me quite busy always and I am glad I am getting more organized than before and managing to do things on time.


  So one of these days, I tried a simple variation of the upma by adding in the corn. I infact loved the recipe. It came out nice and it tasted delicious too. We just had it without any side dish as we love it that way. But you can try some coconut chutney or some pickle.Do try it for a change.

  1. Ghee-3/4tbsp (1 1/2tbsp in original recipe)
  2. Oil-1tbsp (3tbsp in original recipe)
  3. Curry leaves-few
  4. Green chillies-2 chopped
  5. Onion-1 big chopped fine
  6. Corn kernels-1/2 cup
  7. Water-3 cups
  8. Lemon juice-1tsp
  9. Red chilly powder-1/4tsp
  10. Salt to taste
  11. Fry the rava with ghee on a low flame in a kadai/pan till iy starts to change colour and gives out a nice aroma. Remove the rava on a plate.
  12. Heat oil in a same pan. Add the mustard seeds, When it crackles, add channa dal.Add curry leaves,green chillies and onions. Fry till onion turns transparent.
  13. Add water, lemon juice, salt ,red chilly powder. Boil.
  14. Cover and cook on low flame till dal turns soft. Add corn. Slowly add the rava/suji stirring continuously and ensure there are no lumps.
  15. keep mixing till the water dries up.
  16. Cook for a few more minutes.Remove from fire.
  17. Serve warm with some chutney or pickle if you wish.
Recipe Notes

Notes- I reduced the amount of ghee and oil as stated in the original recipe. But you can add more ghee as it does gives a nice flavour.
