I decided to bake a mango cake. I used a simple vanilla cake recipe and adjusted the ingredients to include the mango puree. I used fresh indian mango(banganapalli) variety . I did not bother to try with the whole wheat flour this time and went ahead with the refined flour. The cake turned out to be very soft and spongy.
It looks so appealing with the jam on the top and kids will surely enjoy them. So that day I decided to make the normal way without any healthy ingredients. I used all purpose flour and granulated white sugar. I used only half a cup of sugar and it was okay for us. There is sweetness of the jam too.
I have seen in a couple of blogs featuring them and they looked quite tempting. I wouldn’t call this cake completely healthy. I have used an egg and the regular granulated sugar and the usual ingredients. Except that I have added more of whole wheat flour and a little of plain flour. But for a more whiter and a spongier texture, you can consider using plain flour completely.
I have used some jowar/sorghum flour of which I had some in the freezer. I wanted to use something healthy and thinking of whole wheat flour or oats, I finally decided to make with millet. You can try using any kind of millet flour. I have not tried but am sure it would work as long as there is chocolate in it. You can even use whole wheat flour instead of maida. The texture would be a bit more chewy in that case. And please feel free to use any kind of sugar you have. I have used orange marmalade here . I have always loved the combination of orange and chocolate.
This particular bread happened when I had the abundance of all the required ingredients. I had seen this recipe recently and I love it as it was a bit unusual than rest of the banana breads we usually bake. I had bought some cream cheese couple of months ago and I had to use them.
I thought the mango flavour in the icecream was so intense that the cake would taste great.The cake tasted good and to my surprise kids loved it too. I love to have a small slice with my coffee in the evening.
