Cream cheese cookies

The month of september was quite busy especially with the kids activities. The last couple of months always are as the academic year is coming to an end. With the kids final exams coming up combined with all the festivals took up all the time and I dont even remember how the month went by. September just saw a single post. So I though I should be posting atleast one recipe this month. I will try to do a few posts , but can resume regular blogging only in january now. But I will surely be active in instagram. I plan to do a few quick recipe videos especially some simple recipes we cook everyday. I just use my phone camera for it , so please dont expect them to be proffesional , but I believe it will be useful to the people who are new to cooking and baking. You can follow me on instagram or even like my FB page.cream cheese cookies

I had made this cookies almost a month back probably during the september term break. I remember by son and hubby devouring the cookies till the last bite. They had really enjoyed them and my son till date asks me to bake them again though I have never found time to bake more. The recipe was just decided on an impulse. I had some cream cheese nearing expiry date. I had made this delicious banana bread with the cream cheese. So I thought of using the rest in the cookies. I never imagined it to be so good. I also added some butterscotch chips which I had picked up from cold storage. They also imparted a awesome taste. Its a very simple recipe and done in minutes. I am surely going to make them again sometime. They are delicious,so so try them.

Instructions
  1. Keep the butter and cream cheese at room temperature for about an hour so that it will be soft enough to use it easily in the recipe. Add the softened butter and softened cream cheese in the mixing bowl. Mix.
  2. Add the powdered sugar to this. Mix with a electric beater or a whisk till it mixes well. Add the vanilla essence. Combine the flours in another bowl. Now slowly combine the flour with butter-cream cheese - sugar mixture. Mix with a spatula and then you can use your fingers to gather them together.
  3. Add the butterscotch chips and mix well to a dough. Pinch small portions from the dough and roll them into lime sized balls. Place them on a baking tray lined with baking sheet. Flatten them. Bake at 180c for 10 minutes. Allow them to cool for 15 minutes before serving.
