Eggless Banana muffins with streusal topping – easy Baking recipes

     Baking and blogging is therapeutic for me. But this is something I am doing very rarely or not as regularly as I would have liked it to be. I have a lot of baking recipes in my mind and I have also shopped for some baking products. I have a number of recipes bookmarked. I hope to do them one by one very soon. Anyway there are other things going on and I have been really busy with them. Though blogging is taking a backseat , I have been utilising my time in some other positive ways.


             This was one of the bookmarked recipes which I found through foodgawker I guess. Though we do not have muffins for breakfast, on one lovely weekend morning, I decided to bake them. Its very easy to make and takes very little time. Actually my hubby took my kids to the park and by the time they came back, it was all done. Do try baking them even if your new to baking. I have always loved banana cakes when they are baking. It gives out a beautiful fragrance which wafts throughout the house. I hope you enjoy baking this one!!!

Instructions
  1. Preheat the oven at 180c.
  2. Line the muffin pan with muffin cases.
  3. Mash the bananas in a bowl.
  4. Add the sugar,oil and yogurt and mix well.
  5. In another mixing bowl, combine the atta, baking powder and baking soda.
  6. Combine the dry and wet ingredients together mixing till well with a spatula.
  7. Add a small portion of this batter in the muffin cases filling it to a 3/4 th level.
  8. In a small bowl, combine the ingredients for streusal topping.
  9. Mix it to a crumbly texture.
  10. Sprinkle the streusal topping mixture on the batter in the muffin cases.
  11. Bake at 180c for 20- 25 minutes.
  12. Check by inserting a skewer in the muffin. if it comes out clean, then its done.
  13. Allow it to cool well before serving.
Recipe Notes

Notes-

1. You can all purpose flour or maida instead of atta.

2. You can normal granulated sugar for the cake batter.

3. You can use brown sugar for the streusal topping.

4. Use melted butter instead of oil.

5. You can use 1 egg in place of yogurt if you dont want it eggless.

6. Use ripe bananas!!
