I have been baking atleast once a week for the past few weeks. I serve them to the kids during tea time. So they are quite overjoyed. My son observed this and told me that its feels good to have home baked goodies every week. It is satisfying for me too as I dont have to serve them store bought sugar loaded cookies everyday. And as I always mention that I use healthy ingredients like millet flour or oats or whole wheat flour for my baking. So that is another reason I feel guilt free. Some of my friends do reason out that using whole wheat flour or other kinds of flours will render the baked product a bit denser or will be less sweeter if I use other sweeteners instead of sugar. But my family and me are quite happy with it. My kids have grown to like the healthy baking I do. And for me,I find it even better than the store bought cakes and muffins.
I was so happy to find out that we get even blackberries now at the fairprice finest in our locality. After the opening of this supermarket in our neighbourhood, we have been able to get lot of exotic fruits. I have mentioned this before and I have used a lot of this fruits in various recipes such as this one. So last time, when we got some blackberries, we wanted to have them as such as we had never tasted them before. They were pretty expensive, So I was quite careful using them. However I kept a few apart to use them in my muffins. I just made six muffins exactly, so a cup of this berries were just enough for this recipe.
I was not very confident making muffins before as sometimes it would sink in the middle or at other times, it would rise well and then turn out flat. But this recipe worked out just fine. It had a beautiful top, slightly domed and the texture was a bit dense the way I wanted. It was soft and slightly spongy, On the whole they were delicious with slight tart and sweet bites of blackberries. I will surely consider this recipe when I bake muffins in future. I was quite happy with the result.
