Eggless carrot beetroot brownies

Wishing all my readers a very happy new year. Hope the new year is treating you all very well. I do hope to be atleast a little regular in blogging compared to the previous year. I was really occupied with a lot of things last year and this year I have brought some changes and I now hope to spend some time for myself too. Though I have been regularly working out doing brisk walks and yoga. This year, I am getting involved to various other activities like jogging,aerobics ,yoga and zumba to make my workouts more interesting. I want to be regular visitor to the library and spend sometime reading everyday.  Apart from this , I want to spend more time with my kids. I do want to try to stop feeding them with junk and more of processed food. So I want to spend some time doing healthy cooking and bring up some healthy baking recipes.I really hope to change their diet pattern. So that should also give me opportunity to blog more of this recipes. I have already been doing this and I keep sharing the pictures in my instagram too. So please do keep visiting and continue to encourage me with your comments.

A healthy brownie recipe using whole wheat flour,carrots and beetroots.

  1. Preheat the oven at 180c. Add the flours,baking powder and baking soda along with grated carrots and beetroots in a mixing bowl. Add cinnamon powder and cocoa powder. Mix well.
  2. In another mixing bowl, add the curd , milk and oil. Pour the wet ingredients in the dry mix and mix the contents with a spatula. Add a little milk if the mix is too thick.
  3. Grease and flour a cake tin. Add the mix in it and flatten with a spatula.Bake it at 180c for 35 minutes. Check if the cake is done by inserting a knife in the center of the cake. Cool and then slice the cake into squares.
  4. Store the rest in the refrigerator. It tastes even better the next day!
