Eggless fruit and nuts christmas cake – easy Christmas cakes recipes

    The last month of the year saw very few posts in Creative Saga. Some really unexpected things happened and I was not in mood to even open my computer.

    I thought of posting the Christmas cake which I had baked a couple of days ago as it is Christmas tomorrow. The recipe is quite easy and if you have not baked your cake, you can follow this one. It does not need any soaking of fruits.

         I was in a hurry, so I cut the cake quite soon and it crumbled.The cake was really delicious, so am sure to bake the cake again and I will update with more pictures of the cake.

  1. Preheat the oven to 180c.
  2. Grease and flour a cake tin.
  3. Take the dryfruits and nuts in a bowl.
  4. Melt the butter and add it to the fruits and mix well.
  5. Heat 1/2 cup sugar with 1tbsp water in a heavy bottomed pan,
  6. It will turn dark brown in colour. remove from flame.
  7. If you overdo , it might turn bitter
  8. Add this caramel to the fruits and mix well.
  9. Add the jam.
  10. Add the orange juice, sugar,vanilla essence and spice mixture.
  11. Mix well.
  12. Combine the flour, baking soda and baking powder.
  13. Add it to the above mixture little at a time and keep mixing with a spatula.
  14. Pour the mixture into the prepared cake tin.
  15. Bake at 180c for 40 minutes.
  16. Check the cake if done by inserting a knife in the center of the cake and it comes out clean.
  17. Cool the cake really well, maybe for a couple of hours or even overnight before cutting.

Notes-

1. Cool the cake really well before cutting or it will crumble.

2. I used readymade fruit mix, but you can use a combination of tutti frooti, prunes, raisins etc.

3. The spicemix I used was also commercially available. But you can make it by grinding little cinnamon, cloves and cardamom.
