Eggless vanilla cake using condensed milk – easy eggless bakes

          It has been raining cakes at my home for the last couple of days. And as there were lot of festivals going on, I was baking eggless versions most of the time. I baked the dates cake for Navratri potluck lunch and was appreciated by everyone. My hubby has been asking to bake it again and I will be doing it soon.I have been dreaming of dates cake topped with some badam halwa !!Awesome combo , wouldn’t it be!!!Then I carried a eggless chocolate cake for my friends kids and then a vanilla cake for a friend’s kid who came to spend sometime at my place. Meanwhile I made this vanilla cake in midst of all this just because I had to use up some butter.

          There was a time when I baked only chocolate cakes as I thought my son only enjoyed chocolate cakes.But when I baked this one, and my son had it to his heart content, I decided to bake more of vanilla cakes. And using condensed milk as a egg substitute was in my mind for a long time. I have had condensed milk cakes before. This cake happened my chance when I whipped cream so hard that it turned into butter. You can read about it here.

The cake was beautifully moist and spongy. It was very delicious and the cake got over in no time. I adopted a  very simple recipe without any complications. Some recipes I saw in the net also used some vinegar.I did not have , so skipped it. It improves the texture, but is completely optional.

I have also baked an eggless condensed milk chocolate version for a friend and will post about it soon. Hope you try this soon and let me know how it turned out for you.

  1. Preheat the oven to 180c
  2. Grease the cake time with butter and flour it.
  3. Combine the condensed milk and melted butter. Stir with a spatula to a uniform consistency.
  4. In another bowl, Combine the flour, baking powder and baking soda.
  5. Combine the wet and dry mixture to a uniform cake batter.
  6. Add the vanilla essence and mix well.
  7. Add water or milk to adjust the consistency of batter if its too thick.
  8. Pour the cake batter in the prepared cake tin.
  9. Level it with a spatula.
  10. Bake at 180c for 35 minutes or till a skewer inserted in the center comes out clean.
  11. Cool for 10-15 minutes.
  12. Invert on a plate and slice only when the cake is completely cool.
  13. Notes-
  14. You can add some chocolate chips or tutty fruity to the batter.
  15. Add a tsp of vinegar for better texture.
  16. Add more sugar if you want it more sweeter. Otherwise condensed milk is enough to give the sweetness to our liking.
