Grated mango sweet pickle | chundo– pickle recipes|Mango recipes

  This was a favourite of mine especially during my childhood days. My mom used to make this and store in big glass jars and it would be over in no time. I used to have it with everything , even with my curd rice. But I loved spreading it on the phulka/chapatis, rolling it and polishing it off in no time. I just used to have spoonfuls of it whenever I felt.But few years ago, it was almost forgotten. Yes, it just been a recent few years, I have been buying mangoes in Singapore  especailly the raw mangoes to make aam panna. I was suddenly reminded of this and I made it one day. The spicy and sweet taste of it bought back all my sweet memories!!

  1. Peel the skin of the raw mango and grate it.
  2. Combine the grated mango,sugar,salt,red chilly powder,saffron strands and cardamom powder in a pan.
  3. Mix everything together with a ladle.Cook in a medium flame till the sugar turns syrupy .
  4. Keep stirring till the mixture thickens like a jam/marmalade. It takes around 15-20 minutes.
  5. Remove from flame. Allow it to cool.
  6. Store in a airtight clean sterilised glass jar.
  7. You can serve this with rotis, spread on phulkas for your kids or even with pooris.
  8. Notes-
  9. 1. Some use even cumin powder or pepper. You can add if you want.
  10. 2. Dont overcook till it gets really hard.

3.Store in clean sterilised bottles if you are making in large quantities.
