This recipe was given to me by a very good friend from Delhi. When I was expecting my second baby, I could not cook without difficulty because of the bad morning sickness I had. My friends here helped me a lot that time by cooking food for me and various other ways. This friend used to give my this gravy almost everyweek which I used to keep frozen in a refrigerator. Some days,when I really was in no mood to cook, I just used to heat up this gravy and add paneer ,or peas or potatoes. My meal was ready in minutes. This would go well with some hot rice or rotis.
Chop the onions, tomatoes,garlic and ginger to tiny pieces.
Add the fennel seeds to it.
Grind this all together into a fine paste.
Heat oil in a pan.
Add the ground paste in the oil.
Add the turmeric powder,red chilly powder,coriander powder,garam masala, kasuri methi and salt.
Mix everything together.
Keep stirring with a dry spoon.
The gravy should turn dry and the oil in completely absorbed and the water all evaporated.
This will take around 20-30 minutes.
Store this gravy in a clean and dry air tight ,freezer safe container.
Store this in the freezer for around 10 days.
If you are using it in the next two days, then you can even store in the refrigerator.
To use this ,thaw the gravy. Heat a pan. Add the gravy. Add necessary amount of water.
You can add your choice of veges. Paneer ,peas,potatoes ,mixed vegetables and even chole/chickpeas are a good choice. If you eat egg, you can add slit boiled eggs. Your any side dish will be ready in 10 minutes.
