How to make Nankhatai – Nankhatai recipe – easy baking recipes

   Nankhatai has been in my to do list for a very long time. Infact everytime I bake a cookie, I think of making this as this recipe has been the base of most of the cookies I have made and posted here.Except that I wanted to use ghee as I have used butter in all the cookies till now. Ghee gives a nice flavor and lovely texture to the cookies. My friend had made this for Diwali and shared a few with me. They were delicious and I loved the white colour of the cookies. She gave me the recipe for this. I also reffered several sites especially for the measurements and they were all near about the same. My family simply lovvveeed the cookies. I also shared a few with a friend. She messaged me within an hour that they were really nice and tasty.So do try them and your kids will love it too.

  1. Preheat the oven to 180c.
  2. Powder the sugar in a blender.
  3. Grate or cut the pistachios to tiny bits to almost a coarse powdered form.
  4. Combine the ghee and sugar.
  5. Using a hand whisk, mix it till it becomes creamy.
  6. Add the flour slowly,keep mixing with a whisk.
  7. Add the baking powder,baking soda and the cardamom powder.
  8. Mix everything well.
  9. You can just bring everything well together using your fingers to form a dough.
  10. You don't need to knead it, just combine everything together that is sticking to the sides of the bowl and the whisk. Its quite crumbly.
  11. Line a baking tray with a parchment paper, butter paper or a baking sheet.
  12. Pinch small portion of the dough. Make a ball. Place it on the baking tray.
  13. Repeat the same with rest of the dough.
  14. Gently press it.
  15. Leave a little space between the cookies.
  16. Place some pistachios powder on the center of each cookie.
  17. Place the baking tray in the preheated oven.
  18. Bake at 180c for 12-15 minutes.
  19. Remove from oven and allow it to cool on metal rack.
  20. Store in a airtight container.
  21. Notes-
  22. If the dough is too dry, add a tbsp. of milk and mix.
  23. If the dough is too moist, add little flour.
  24. The temperature effect will be different in different oven.
  25. So the baking time may vary anywhere between 10-15 minutes.
  26. Don't wait for the cookie to brown.
  27. When you see slight cracks, remove them.
  28. They will turn very hard if you overbake them.
  29. Don't worry if they are too soft and crumbly when you remove from the oven.
  30. They will harden as they cool.

  12. Sowmya, Thank you so much for this great recipe. I have been trying to make these for ages and so far, my efforts have never satisfied me totaly. But, your recipe was right on bang. Believe me when I say that I tried the first batch on Friday and made 5 bathces by Sunday for my family and friends – it was a case of “no one can eat just one!!!”. I made some variants by replacing cardamom powder with vanilla essence and topping them with tutti-fruti. the other version was adding 1 tsp of cocoa powder and vanilla essence and topping with chocolate chips. They were all a great hit. One request – can you give me a savoury version of these (known as Osmania Biscuits here in Hyderabad). Thanks and keep up the good work. Lalitha
