How to make pal payasam in a pressure cooker — Pressure cooker kheer recipe

         I wanted to post this last week itself as it might have been useful for some readers who wanted to celebrate navrathri even in their busy schedules. But I have been so busy , not with navaratri infact, but with the regular activities. So one day during this 9 day festival, I made this kheer in a hurry.Yes, because this delicious dessert can be done in 5 minutes. The actual cooking time involves more than 30 minutes, but the preperation time is just 5 minutes. It does not require continuous stirring like the traditional payasam.Nevertheless, you can always make this for the upcoming festivals!!

          The resultant kheer is awesome, I promise you. Its thick and creamy as if you have added condensed milk. It has a beautiful pinkish colour too. It actually reminded me of the pal payasams served during wedding and other functions. I hope you try this and let me know how it turned out for you.

  1. Boil the milk in the pressure cooker pan.
  2. Wash the rice. Drain the water.
  3. Add the rice in the mik.
  4. Add sugar and cardamom powder.
  5. Add the nuts.
  6. Stir well.
  7. Close the lid.
  8. Place the cooker weight.
  9. Cook till it gives out 3 whistles.(Use low to medium flame).
  10. Let it depressurize completely.
  11. Open the lid only after 20-30 minutes.
  12. Notes-
  13. You can use any other varieties of rice also.
  14. When you open the lid and find the payasam too thick, add some boiled milk. Stir and loosen the consistency.
  15. If its still very watery, close the lid and cook for some more time.,maybe for more number of whistles and open the lid after10-15 minutes only.
  16. You can roast the nuts in ghee and add it in the end after you open the lid.
  17. Dont use high flame as the milk may burn at the bottom of the pan.

    I tried this recipe today because it is so simple. Used lactaid milk and was absolutely delicious. I remember my aunt making it in a pressure cooker but her recipe seemed to have a lot more steps. Thank you so much for this recipe. Everyone in my family enjoyed it.
