Its long time since we had a routine of evening snacks. It happens once in a while during weekends if we are really hungry, but we are more used to early dinner. We used to have evening snacks when we were in school when we returned home quite late in the evening. Every evening, my mom used to make some yummy snacks and we really looked forward to it. This snack with vermicilli used to be prepared especially during the summer seasons. Mom used to make it in the afternoon, add some cubes of ice and serve us chilled. It used to be so good when we came back sweating carrying our heavy bags from school.
I made this for our dinner one weekend. It was the first time I made this and my hubby liked it. Do try making it during this summer and tell me how you liked it!!
Heat a teaspoon of oil in a pan. Add the semiya. Roast till it turns golden brown. Keep it aside on a plate. In the same pan, heat rest of the oil. Add the mustard seeds, udid dal, asafoetida and curry leaves. After it crackles, add the roasted semiya. Mix well. Add a glass of water.Add salt and cook till the semiya turns soft. Add sugar if adding. Allow this to cool properly.
Take the curd in a serving bowl. Beat the curd with a spoon. Now add the cooled cooked vermicilli/semiya to the curd and mix well. Serve chilled.
You can try adding raisins, fresh fruits like grapes or pomegranate. You can even add roasted cashews if you wish, just your choice, depending on how creative you wish to be with this one when you serve to your loved ones or guests!!
