Instant mini pizza recipe – No yeast required – quick kids snack recipes

        After the diwali festival was over, I had no mood to cook or even eat anything for a couple of days. We just survived on some simple dal, roti , upma etc until my kiddo decided that this was enough and demanded something really cheesy and delicious. I had really put in lot of efforts making sweet and savouries for diwali and was in no mood to toil in the kitchen for hours together again. So this idea of making instant pizza struck me. I had planned to make this a couple of months before. I had promised that he would have this when he comes back from school. So this was ready in less than an hour. Everyone at home really enjoyed it. I do plan to make a more healthier  pizza base next time. So will update as Soon as I work on it. Till then make this for your kids after school or holiday snack. They will really enjoy this one and you will love making this one.

Instructions
  1. Combine the flour,baking powder and salt.
  2. Sprinkle water little by little as you knead it to a dough.
  3. Drizzle the oil and knead to form a non sticky dough.
  4. Heat the oil in a pan.
  5. Add the onion and saute till it is transclucent.
  6. Add the tomatoes followed by salt and pepper.
  7. Cook till the tomatoes turns soft.
  8. Add the paneer, mushrooms and capsicum.
  9. Add oregano spice.
  10. Saute for around 4-5 minutes till the vegetables turn slightly tender, but retains the crunch.
  11. Preheat the oven to 200c
  12. Make small gooseberry sized balls with the dough.
  13. Roll with a rolling pin to a 1 inch flat circle.
  14. Brush some tomato sauce on the circles.
  15. Place and spread a generous spoonful of the cooked vegetable topping on it.
  16. Sprinkle some cheese over the vegetables.
  17. Bake the pizza in a preheated oven at 200c for around 7 -10 minutes.
  18. That is , the cheese should have melted and should be turning slightly golden brown on the top.
  19. Remove from oven and allow it cool slightly for 5 minutes.
  20. Serve warm.
  21. As we have made mini pizza, serve as it is, you don't need to slice it.
  22. Notes-
  23. Modify the size of the pizza base as per your desire.
  24. Use store bought pizza /pasta sauce instead of tomato sauce. You can also make your own marinara sauce at home.
  25. Change (Add or delete) the topping ingredients like pineapple, tofu as per your liking or according to what is available with you.
  26. You can add some chilli flakes or cheese powder on the top before serving.
