Kalkandu saadam recipe- Sweet rice recipes

         Happy Navratri to all my lovely readers and blogger friends!!

 This is a traditional dish in Tamilnadu. I am posting this as  Navaratri begins today. You can also try this delicious sweet along with some savoury chundal when you invite your friends over for golu .

I had made this during a religious get together few days ago.Everyone liked it including the kids.

Ingredients
  • 1 cup sugar rock sugar kalkandu/ candy/rock
  • 1 1/2 cup Rice
  • 1/2 cup Milk
  • a pinch Cardamom powder
  • a small pinch Orange colour
  • strands Saffron / kesar (optional) - few
  • 5 Cashewnuts - broken to small pieces
  • 1 - 2 tbsp Ghee

Ingredients
  • 1 cup sugar rock sugar kalkandu/ candy/rock
  • 1 1/2 cup Rice
  • 1/2 cup Milk
  • a pinch Cardamom powder
  • a small pinch Orange colour
  • strands Saffron / kesar (optional) - few
  • 5 Cashewnuts - broken to small pieces
  • 1 - 2 tbsp Ghee
Instructions
  1. Wash and soak the rice for 15 minutes.
  2. Drain the water. Pour around 3 cups of water.
  3. Cook in a pressure cooker till very soft.
  4. Dissolve a pinch of orange colour in the milk.
  5. Melt the ghee in a pan.
  6. Add the cashewnuts and roast till brown.
  7. Remove them and keep aside.
  8. Add the candy sugar along with half a glass of water.
  9. Let the sugar dissolve.
  10. Add the cooked rice and mix well.
  11. Add the orange colour with the milk.
  12. Add the cardamom powder and saffron.
  13. Stir in intervals and cook till the mixture thickens slightly.
Recipe Notes

Usually the consistency of kalkandu saadam is semisolid.(something like venn pongal or khichdi)

Add the roasted nuts and mix well.

Notes-

Adding the colour is optional. But its quite attractive especially for the kids.

You can also cook the rice with some milk just as we do for chakkarai pongal.
