Kalkandu saadam/bhaat// sugar candy/rock sugar rice-using brown rice

         I had a packet of brown rice for a long time,a result of an old habit of picking up things while shopping even if I am not sure how I am going to use it.I do have nice brown rice recipes right here in this blog but I had bought this one with an objective of trying out new recipes. I decided to substitute it for white rice for kalkandu saadam which I was making for a religious gathering.

I will be posting the original recipe with white rice later. Nevertheless I have followed almost the same recipe, but usually the rice is cooked in milk.However I have not used milk here and also I saw no point in adding food colour for brown rice.

         The taste was just wonderful.So now on to the recipe below.

Ingredients
  • 1 cup Brown rice
  • 1 cup sugar rock sugar / misri Kalkandu, candy,rock
  • 1 tbsp Ghee
  • 1/3 cup Nuts - ( I used almonds and pistachios.You can use cashewnuts also)
  • 1/2 tsp Cardamom powder

  • 1 cup Brown rice
  • 1 cup sugar rock sugar / misri Kalkandu, candy,rock
  • 1 tbsp Ghee
  • 1/3 cup Nuts - ( I used almonds and pistachios.You can use cashewnuts also)
  • 1/2 tsp Cardamom powder
Instructions
  1. Roast the brown rice for 5 minutes. Soak the rice for sometime(I did not soak as I was running late.But its better to soak for around 2 hours.)Add 2 glasses of water and cook it in a pressure cooker till it is soft and mushy.
  2. Heat 1tsp ghee in a pan. Roast the nuts till brown.Keep them aside.
  3. You can use the same pan to boil around 1 cup of water. Add the sugar candy. Allow it to dissolve completely and boil till its frothy.
  4. Add the cooked rice along with the nuts and cardamom powder in the boiling syrup. Combine well till it thickens. Add the ghee and mix well.
