      Mango burfi was on my to do list.I have had them a number of times from sweet shops in India and always loved the prominent taste of mango in them. Its years since I have had this kind of traditional sweets , so I wanted to recreate at home. I had one option of using khoya to make the burfi and also bought a packet of khoya during my shopping trips. But later I thought of incorporating the mango in my kalakand recipe which I have made before.

 I loved the result. It had a prominent taste of mango and the grainy texture of kalakand. It was delicious and the sweet is very quick and easy to make too.

  1. Condensed milk- Around 1 cup(equal to the paneer yielded)
  2. Pistachios -5-6 chopped
To make the paneer-
  1. Boil the milk.
  2. When it boils,add the lemon juice and stir it.
  3. The milk will curdle.
  4. Remove from flame.
  5. Spread a muslin cloth on a wide bowl. Pour the curdled milk on it.
  6. Wash the paneer under cold water to remove the smell of lime.
  7. Tie a knot and hang it over the sink, so that the water is drained out.
  8. You dont have to wait for a long time like you do for paneer. Just do it for 30-45 minutes.
  9. Squeeze out the excess water using your hands..
  10. Grease a tray with ghee and keep it ready.
  11. Take the paneer on a nonstick cooking pan. Add equal amount of condensed milk.
  12. Add the mango puree.Mix well and heat the pan. Cook in medium flame.
  13. Keep stirring till it thickens. You have to stop when it does not sticks to the sides.It usually takes around 15 minutes.
  14. Pour the cooked mixture in the greased tin.
  15. Spread it and even the layer with a help of a greased knife.
  16. Sprinkle the nuts on the top.
  17. Cut into squares.
Recipe Notes

Seperate the pieces and serve.

Store the sweets in the refrigerator. Will keep good for 2 days.
