This is a very easy recipe and its my go to recipe whenever I don’t have much time for cooking. This does not really require any side dish as such though you can serve a side dish of your choice if you like it that way. Papads or chips should be a good choice to serve with too!
I used to make my lemon rice quite plain but I like it when my grandmom adds tomatoes and grated carrots in it and it actually enhanced its taste. The addition of whole spices makes the rice more flavourful. I had actually seen a similar recipe in a south indian cookbook ages ago. So I decided to combine everything and make the lemon rice more interesting. My kids loved it this way too.
Masala lemon rice recipe
Make this fortified lemon rice which is more healthy and interesting!!
Wash the rice and drain the water. Add a little salt and turmeric with a teaspoon of oil. Cook till it soft , but grains are seperate.
Heat oil in the pan.
Add mustard seeds,udid dal, channa dal and asafoetida. when it splutters , add red chillies, and whole spices. saute. Add peanuts and curry leaves.
Saute for a minute.
Add the tomatoes and carrots. Mix and saute for 4-5 minutes till the mixture is dry.
Add the juice of one lemon and mix.
Add the cooked rice and mix everything well together.
Serve with gravy /curry of your choice ,curd,papad and chips.
