Millet cookies/millet nankhatai

With a busy schedule , it becomes difficult to blog regularly. But I have been more organised and less lazy to finish off my daily routine at a proper time. So I set aside time to make something more than the regular cooking everyday. Though sometimes, other things comes up and takes up my time. But I have been baking or making healthy snacks for my kids to have during the tea time. This helps in less indulgence of store bought unhealthy stuff.millet cookies

I use millet in my cooking quite often. I make vegetable millet upma . I had got millet flour sometime ago. I used it once in making dosas. The flour is not at all coarse and is quite smooth and powdery which I thought will be quite ideal in baking. I have tried brownies with them. It tasted good but I still need to adjust the ingredients to make them blogworthy. But the cookies which I made similar to our Indian nankhatai turned out very good.

Instructions
  1. Preheat the oven to 180c. Cream the ghee and powdered sugar in a mixing bowl. Combine the millet flour,baking soda and cardamom powder in a small bowl. Add this flour mixture to the ghee mixture slowly and keep mixing.

  2. Add the milk to the mixture. You can use your fingers to gather the mixture together to a dough. Pinch small equal portions of the dough to a lemon sized ball. Flatten it a bit. Place them on a baking tray lined with a baking sheet. Place few chocolate chips on each cookie and press them gently. Bake them at 180 c for 10 minutes.
  3. Remove from oven. Allow them to cool completely. Serve and store them in an airtight container.
Recipe Notes

Dont allow the cookies to bake for a long time. They should not turn brown.

The cookies when hot will crumble. They will harden as it cools.
