No churn Vanilla icecream – easy eggless icecream recipes

  This icecream recipe really intrigued me.

It does not require icecream machine.

It does not have to beaten again and again to avoid crystals.

It is eggless.

It requires just 2 ingredients.

Its a fool proof recipe. The icecream is really going to be soft and creamy,

Its really going to impress your loved ones.

        So I had to give this a try. I immediately went to the supermarket and got some whipping cream.

I got my things ready on my kitchen table. To my luck, the electric beater gave off:(

I was unable to find my whisk.

I had to use my spatula. I kept on beating the cream, it thickened . I got excited seeing the way it was turning up. I was also in midst of phone call, I beat the cream so hard till it turned to butter!!Then I stopped and then baked a cake instead.

But I was so restless about trying this recipe. I went and bought the cream again. As my beater was not working, I used my whisk and I was also a bit worried about it turning into butter again. I was cautious this time. I thickened and formed soft peaks and I stopped.But you have to do it a tad more till it forms stiff peaks and also doubles in volume. But the result was wonderful. It was soft and creamy and delicious too!! So I do have plans of using this recipe to make other flavours too. But that will be after a few days as I am not comfortable using rich cream and condensed milk so often. But of course, I have been trying more icecream varieties  without cream and all and will post it soon!!

  1. Pour the cream in a bowl.
  2. Using a electric blender(preferably) or a manual whisk, whip the cream for around 3 minutes to form stiff peaks. If you are doing manually, it will take around 10-12 minutes. The volume will almost double.
  3. Pour the condensed milk and gently mix with a whisk.
  4. Add the vanilla essence and mix gently.
  5. Pour the mixture in a freezing bowl.
  6. Wrap with a cling wrap.
  7. Freeze for around 6 hours.
  8. Scoop and serve as you prefer in bowls or cones.
  9. Notes-
  10. You can also top up with some sprinkle or nuts or tutty fruity or cherries.
  11. Or you can serve with some fudgy brownies of carrot halwa or beetroot halwa.
  12. The quantity of condensed milk is sufficient. Add less or more according to the sweetness you prefer.
  13. The whipping cream should be placed in the refrigerator till use.
