Pumpkin pasta recipe

Pasta is a favourite at our place. I loved it when I was young and still love it. My kids love it too. Nowadays there are many other varieties of pasta made with quinoa, or brown rice , whole wheat etc. I love buying them and combine them with a healthy sauce preferably made with vegetables and it makes a healthy and a satisfying meal. I have always loved the white sauce and the cheesy creamy delicious pasta made with it. But since I make it quite often , I am quite daunted with the amount of cheese and flour which goes into it. So I have been trying to make some interesting sauces which are also low in fat and makes the eating experience guilt free.pumpkin pasta

This time I used pumpkin. Its a very simple recipe and can be done in a few minutes. This is also an interesting way to sneak in some pumpkin in your diet especially if you are a pumpkin hater. Many people I know hate pumpkin as they find it quite sweet for their taste. But in this recipe , you actually cant guess that there is pumpkin. Also cashews gives a nice creaminess to the pasta. I used it  as I previously used it here and it was good. The combination of all the ingredients is just delicious and even tastes a bit cheesy. My kids loved it . I have even made this without cashewnuts and it tastes just fine too.


I have used the normal durum wheat tubular pasta . But you can try to use the healthy options available noways. I will be coming with more recipes soon!!

Instructions
  1. Cook the pasta in water adding a little salt Al-dente. Soak the cashewnuts in boiling water for 15 minutes. Cook the pumpkin in little water for around 10 minutes. Also add the garlic cloves in it while the pumpkin is cooking. Allow to cool. Drain excess water. First grind the cashewnuts to a paste. Add the cooked pumpkin and garlic along with it and grind everything to a smooth paste.
  2. Add the oil in a pan. Add the cooked pasta. Add the pumpkin cashew puree. Add salt,pepper and pasta herbs. Mix well . Cook for 5-7 minutes.
  3. Remove from flame and sprinkle some cheese if you prefer. Serve warm with some garlic bread.
