  1. Cook the basmati rice. Grains should be separate.
  2. Heat a pan. Add some ghee. Add cumin seeds.
  3. Add green chilles and cashewnuts. When cashewnuts become slightly golden, add the ginger garlic paste and onions. Saute till the onions turn slightly brown.
  4. Add the tomatoes along with turmeric powder and salt. Cook for a few minutes till it turns mushy.
  5. Add rest of the chopped vegetables. Mix well. Add the curry powder and coconut milk. Mix and allow it to cook till the vegetables are cooked and the mixture is dry. Add the cooked rice. Mix well. Garnish with coriander. I served with dal and curd.
Recipe Notes

I have used srilankan curry powder. Please use any curry powder or a combination of coriander powder and garam masala.
