I am not too fond of red cabbage. I once made a chutney with it years ago and it was quite good, something like thuvayal. Then when my hubby bought it again suddenly one day, I was thinking of what to do with it. The idea of making parathas struck me. I wanted to make it spicy and more flavourful and did not want the over powering taste of red cabbage in it.
It was actually delicious and we all liked it. I will surely make it again as it is healthy and in this form I can include it in our diet and good for kids too!!
Chop the red cabbage finely. You can even chop in a food processor.
Heat oil in a pan. Add the ginger garlic green chilly paste. Add the chopped cabbage. Add red chilly powder, salt and coriander powder.Mix well. Cook for 2-3 minutes . The cabbage should be still crisp and not turn soggy.
Now take the wheat flour. Add the ajwain seeds, salt and coriander leaves.
Add the cooked red cabbage. Mix everything well together.
Add a few drops of water and knead to form a dough.
Use some oil to form a non sticky dough.
Make small balls with the dough. Using a rolling pin, roll the ball to a circle/paratha.
Heat a tava. Place the paratha on the tava. Cook till small black circles appear on the bottom. Rub some ghee on both the sides of the paratha and flip to cook on both sides. Repeat the same with all the parathas.
