Salads have become an important part of our diet. Initially , I was a but lazy to include it in our meals everyday. But for the past few years , I have become more conscious about the food we eat. I make it more healthy using healthy ingredients , avoiding deep frying and using less of fats and sugar. We do indulge at times atleast once or twice a week. But there are some days when I just have salads for dinner and it is quite filling too as I add pulses or a few pasta shells making it into a meal.
I sometimes add cooked quinoa along with rajma and few vegetables. I use white chickpeas and black chickpeas on a regular basis. salads with avacado is also a regular thing at my place. Other vegetables which I commonly use for my salads are cabbage,carrots,beetroots,tomatoes and some fruits too. This time I found some cute looking red radishes in the super market and bought them. I made a quick salad with it including pulses in it. I had it for my dinner. I also had a store bought mint chutney which I used in this recipe. But you can make the mint chutney/green chutney at home too. I do that and I have used them in salads too. The salad was delicious and I was quite happy that my son liked it too.
