Simple vegetable sambar recipe- -How to make south indian sambar

     Some couple of years ago, when I posted a tamil lunch, a reader requested to post the recipe for south Indian sambar. Though I make it so so frequently, I never took pictures and did a post. Now recently my son has developed a taste for sambar. So I make one with all the healthy vegetables and he actually loves to have it with steamed basmati rice.

     I have given a list of vegetables I usually make with, but its choice. Do try adding sweet potatoes as its very good for kids. Few pieces of  beetroot lends a nice colour to the sambar.

     I usually get a huge stock of milled sambar powder from my native place every year, I have also tried using aacchi sambar powder for a change and liked it. But I will give a recipe for sambar powder which can be made at home in my next post.

  • 1 cup Vegetables- chopped( You can use your choice of vegetables- potato,sweet potato,capsicum, carrots,pumpkin,french beans,beetroot etc)
  • 1 cup Tuvar dal - cooked
  • 1 tsp Mustard seeds
  • 1/4 tsp Fenugreek seeds
  • 1/4 tsp Asafoetida /hing
  • 2 - 3 chillies Red
  • to taste Salt
  • 1/2 tsp Turmeric powder
  • 1 tbsp Sambar powder
  • 1 tbsp Tamarind pulp
  • 1 tsp Sugar jaggery jaggery or - or small lump of .
  • Coriander leaves - chopped
  • 1 tbsp Sesame oil

Instructions
  1. Chop the vegetables to cubes. Place them in water.
  2. Heat oil in a pan. Add mustard seeds and fenugreek seeds. When it crackles, add red chillies ,hing and curry leaves. Add the chopped vegetables. Add the turmeric powder,salt and sambar powder. Mix well.Pour about a glass of water and allow the vegetables to cook. Add the tamarind pulp when cooking.
Recipe Notes

Cook the tuvar dal and mash it well. When the vegetables is soft yet cunchy, add the cooked dal. Mix well. Rinse the dal vessel with some water and add it to the sambar. Now allow it to cook and boil. Add sugar or jaggery.When it thickens slightly and uniformly well in around 10 minutes,remove from flame.

Serve with rice and papads. This goes well with idlis and dosas too!!
