Spicy shankarpali /diamond cuts/ spicy maida biscuits – Diwali easy snack recipes

      Shankarpali is another traditional snack made during diwali.Its quite addictive snack and goes well with your afternoon tea. I love the sweet version of this snack which I will try to post soon. But  I wanted to make some savouries  for diwali, as I  have  posted a number of sweet recipes already. Actually, this shows our love for sweets more than savouries. But I was wrong. My kids were more interested in the savouries. So I have decided to try more of them.

    Coming back to the recipe. I decided to make this diamond biscuits a little different by adding different spices just as we do for mathris or namakpara. It was delicious and as it is mildly spiced kids loved them too especially my younger one tried nibbling a few of them.

Ingredients
  • 2 cups Maida
  • 3 tbsp Butter / ghee
  • 1 tsp Ajwain seeds /omam/carom
  • 2 tsp Pepper - (powdered) see notes
  • 2 tsp Cumin seeds -(powdered) see notes
  • to taste Salt
  • Oil for deep frying

  • 2 cups Maida
  • 3 tbsp Butter / ghee
  • 1 tsp Ajwain seeds /omam/carom
  • 2 tsp Pepper - (powdered) see notes
  • 2 tsp Cumin seeds -(powdered) see notes
  • to taste Salt
  • Oil for deep frying
Instructions
  1. Combine the flour, pepper powder,cumin powder , salt and ajwain.
  2. Add the butter/ghee and using your palms mix it until it resembles bread crumbs.
  3. Now using minimal water (I used around 1/2 cup), knead the mixture into a smooth and stiff dough.
  4. Now divide the dough into 4 equal parts.Shape it into smooth balls.
  5. Rubs some oil on a surface.
  6. Using a rolling pin, roll it into a thick circle like that of a paratha.
  7. Now using a knife or a cutter, cut into diamond of the size you desire. I made slightly large diamonds.
  8. Heat oil for deep frying. When it is hot, slowly add the diamond cuts into the hot oil.Reduce the flame to medium. Fry till they turn golden brown. (see notes and update below the post.)
  9. repeat the same for the rest of the dough.
  10. Place on a tissue paper.
  11. Store in a airtight container.
  12. Notes-
  13. I roasted the cumin seeds and whole pepper together for 3-4 minutes.
  14. when it cooled , I powdered into a fine powder using a spice mixer.
  15. Update-As mine turned a little soft in few days,my friend gave a suggestion. Fry for a longer time in low flame till they turn golden brown. This will keep them crispy for many days.
