Spinach corn cheese sandwich recipe – Easy sandwich recipes

     We often have bread sandwiches for breakfasts, especially my son loves them. He likes to take sandwiches in his snackbox to school. Mostly it will be cheese with some tomatoes slices or among the number of sandwich recipes which are already posted in this blog. But once in while, I try to make some different kind of filling for our sandwiches especially when I have the time. I once had a spinach corn with plenty of green chillies on some bread (something like bruschetta) somewhere in India. I think it was in coffee cafe day, but an not too sure. It was quite good and I had made up my mind to make that similar kind of stuffing for my sandwiches. Its healthy and delicious and kids love it too!!

I already have a sandwich maker , but I saw a panini maker at my mom’s place in India during my last trip there. I got it with me. Since then I really have been having fun making sandwiches at home. I love the brown marks it creates on the bread due to the grilling effect. Kids are loving it too. But you can make it in your regular sandwich maker too. Do try this out, you will love it too!!

  1. Apply butter on both sides of all the slices of bread.
  2. Chop the spinach.
  3. Blanch the spinach. Drain and keep it ready.
  4. Heat a pan. Add the spinach and corn along with salt and pepper.
  5. Cook for around 7-10 minutes.
  6. Place some prepared filling on 2 bread slices.
  7. Sprinkle some cheese over it.
  8. Cover with another slice of bread.
  9. Place in a sandwich maker .
  10. Cook till done.
  11. Serve immediately with some tomato ketchup.
  12. Notes-
  13. 1. You can use any other bread variety too.Example- Whole meal or multigrain.
  14. 2. Use frozen corn or fresh corn kernels.
  15. 3.You can also use finely chopped green chillies if you like it more spicy. Add them along with spinach and corn and saute them together.
