Stuffed okra recipe- How to make bharwan bhindi- Side dish for chapatis

          I have made this many times by now, but somehow never managed to click pictures. Its actually very easy to make and is not time consuming as it seems to be.

          There are various versions of the stuffing. Some use just the onion mixture, or grated coconut or powdered peanuts. I have tried with powdered peanuts also and its very tasty too. But I often use besan as I don’t have the powdered peanuts in hand. I am quite lazy to roast ,peel and grind the peanuts!!

          You can even try using a mixture of peanuts, besan or sometime coconut for a different taste.

  1. Wash the bhindi properly.
  2. Drain the water.
  3. Wipe it dry with a cloth.
  4. Cut the head portion.
  5. Slit it in the center vertically.
  6. Meanwhile prepare the stuffing.
  7. Heat 2-3 tsps of oil in a pan.
  8. Add the garlic and onion and saute till translucent.
  9. Add the turmeric powder,hing, red chilly powder, coriander powder,garam masala and salt.
  10. Mix well.
  11. Add the besan.
  12. Saute and mix it well along with the spices.
  13. Saute for 5 minutes till the raw smell goes.
  14. Sprinkle around a tablespoon of water to make the mixture slightly moist.
  15. Now carefully stuff the besan mixture into the slit bhindi.
  16. Heat the oil for shallow frying in a large flat preferably non stick pan.
  17. Place the bhindi one by one in the oil.
  18. The stuffing side should be on the top so that one portion of the bhindi lies below and is to be cooked till it browns.
  19. Cover with a lid.
  20. Allow the lower portion to brown.
  21. The upper portion will become soft.
  22. This will take around 15 minutes.
  23. Do this in medium flame.
Recipe Notes

Serve the bhindis with some chapatis and some dal.

  8. the masala can be grind after the saute and gram flour added, then stuffed in the bhendi, it would be easy to stuff, and the masala would reach deeply.
