Subz Badami recipe- side dish for naan,rotis and rice

    I had had something called subz badami in a restaurant in India which looked and tasted very different from the recipe I am posting today. It was a spicy and a rich curry we had with naans. I wont say it wasn’t delicious. But I took the basic idea and made this vegetable gravy which went very well with hot and steaming basmati rice.I basically wanted to avoid cream in the gravy which actually makes it so delicious. I have a shahi paneer recipe which uses cashew paste which makes the paneer dish awesome and rich. So I got the idea for using almond paste for this gravy. We all loved this one and I will make this again for sure.

  1. Heat oil in a pan.
  2. Add the onions and ginger garlic paste.
  3. Saute till the onions turns transclucent.
  4. Add the tomatoes and cook till they turn a little soft.
  5. Add the chopped vegetables.
  6. Add the turmeric powder,red chilly powder,coriander powder,garam masala,kasuri methi and salt.
  7. Mix everything well together.
  8. Add the curd and mix well. Close with a lid.
  9. Cook till the vegetables turn tender.
  10. Mix the blanched almonds and milk. Grind it to a smooth paste
  11. Add the paste to the cooked vegetables.
  12. Cook for another 5 to 7 minutes till the consistency thickens to your desire.
  13. Serve hot with rice or rotis.
Recipe Notes

Notes-

Keep the consistency thicker for rotis and a little loose for rice or as desired.
