Sweet potato brownies

Finally as I had promised in my previous post that I will be back to blogging from january,I am here with a new recipe. November and december months were quite busy with our trip to India. We had a good time with family and friends,eat a lot and travelled to different places. I had a few people out there who encouraged me to blog regularly. I had done a fair job in blogging last year by posting atleast one or two recipes a month. I hope to do a better job this year. I am also quite active in instagram. You can see some of the pictures taken in India too. But I could not click food pictures everywhere I went as I used to forget or I would be too hunger myself or too busy with the kids around!!!sweet potato recipes

So now ,we are back to Singapore and getting back to the routine as schools have reopened. I have started with the usual cooking. I had made this brownies a couple of months ago for my kids snacktime. They love anything with chocolate and I promptly sneaked in some sweet potatoes making the brownies healthier. Walnuts give a nice crunch and chocolate just enhance the taste. They had a nice texture and were really delicious. Kids enjoyed and sweet potatoes imparts the necessary sweetness , So I have added very little sugar to it in the end. If you try this recipe, please add sugar according to the sweetness you prefer.You may want more or less than the given quantity.

Healthy and very easy brownie recipe using sweet potato!!

Instructions
  1. Preheat the oven at 180c. Line a preferably square baking tin with baking sheet or grease the tin well with some butter. Peel and chop the sweet potato into small pieces. Take them in a pan. Add some water and cook till soft. Allow it to cool and mash it to a smooth paste. Chop the chocolate into tiny pieces.
  2. Grind the oats flakes to a fine powder. Take the oats flour in a mixing bowl. Add the cocoa powder and baking powder.
  3. Add the mashed sweet potato and chocolates. Mix. Add the Oil and milk and mix well with a spatula. Add some sugar and mix everything well together.
  4. Pour the batter in the prepared cake tin. Bake at 180c for 30-35 minutes. Check if the cake is done by inserting a skewer or knife in the center. Allow the cake to cool and slice them to desired shapes or into squares. Serve.
Recipe Notes

I usually place the remaining cake in a airtight container and place it in the refrigerator.
